This recipe shows you how to make a clean, basic greek salad that is not only keto friendly, but is also vegetarian and can be made vegan/paleo if you substitute the feta cheese for tofu or almond based fetta.

This salad has quickly become my favorite salad to make to accompany a nice piece of protein, or even as a main meal in itself. The rich flavors and umami of the cheese contrasted with the fresh zest of the tomato, cucumber, and olives make this an absolutely delicious basic meal to add to your repertoire.

- 2 Tomatoes
- 1 Cucumber
- 1/2 Green Capsicum
- 1/4 Red Onion
- 16 Kalamata olivespitted
- 50g Greek feta cheese1.75 oz
- 1tablespoon oregano
- 2Tablespoons olive oil

Wash and cube the Tomatoes, Cucumber and Capsicum. Place into a large bowl.

Dice the red onion, adding it to the bowl.

Add the olive oil and oregano to the bowl and stir around until all the vegetables are coated in both the oregano and a healthy amount of olive oil.

Dice the Greek feta and slice the olives. Add to the top of the salad.

Serve fresh, or store in an air tight container.
