Easy Coconut Flour Chocolate Chip Cookies (Paleo and Delish)

There’s definitely no shortage of incredible paleo friendly chocolate chip cookie recipes. That doesn’t mean you still shouldn’t expand your horizons a little bit and try out some new recipes though! Especially recipes like this one for making a delicious batch of easy coconut flour chocolate chip cookies. Even after making chocolate chip cookies in dozens of ways, I’m constantly impressed by how just about every different recipe makes a batch of cookies that are slightly unique but still 100% delicious.

It All Comes Down to Healthy Ingredients

It goes without saying that the real secret to making delicious paleo cookies lies in using all natural healthy ingredients. This recipe is no exception and the first thing that you’re going to want to do is combine your coconut flour, baking soda, and salt together in a bowl. If you’ve never baked with coconut flour before, then you’re in a for real treat when you try these cookies. Not only do they add a delicious hint of coconut to every single bite, but it’s quite a nutritious baking flour as well, especially when compared to more refined wheat flours. It’s an excellent source of fiber, protein, and healthy fats. And while many people tend to shy away from coconuts due to their high saturated fat content, the type of fats found in coconut are actually medium chain fatty acids, which actually can provide you with quite a few benefits. Ghee, the Paleo Alternative to Butter

The next step is to mix your coconut sugar with the melted ghee. Along with using dark chocolate chips, the use of ghee (clarified butter) is intentional as it ensures these cookies are 100% dairy free. It also still contains that rich buttery flavor that makes chocolate chip cookies so delicious, and it even contains a solid amount of fat soluble vitamins. Likewise, the use of all natural coconut sugar instead of refined table sugars helps to add a nice sweet taste to your cookies. Better yet, coconut sugar actually contains trace amounts of certain nutrients, like fiber, while regular refined sugar contains absolutely no nutrients whatsoever.

After combining the ghee and coconut sugar, you can then add in the vanilla extract and three eggs. Once everything has been combined, the next step is to add in your prepared coconut flour mixture before finally folding in your dark chocolate chips. Along with the coconut flour and ghee, using dark chocolate helps to add even more healthy fats to these cookies, which as we all know when following a paleo diet is hugely important. Better yet, dark chocolate is also an incredibly rich source of disease fighting antioxidants. (2) After adding the chips, let the batter sit for a few minutes until it thickens and then you’ll be all set to enjoy the smell of freshly baking cookies.

Aside from the fact that using coconut flour makes these cookies unbelievably tasty, I think my favorite part of this recipe is how simple and straightforward it is to make. And that’s exactly the way it should be when preparing such a classic treat as chocolate chip cookies. This recipe is the perfect example of what the paleo lifestyle is all about–still being able to enjoy your favorite foods in a format that is truly both delicious and nutritious.
