Oven Baked Brussels Sprouts
Brussels sprouts can be a dicey subject for some people, but let me convert you over to the dark side with these oven-baked brussels sprouts. Caramelised brussels sprouts are so delicious when paired with a quality piece of ribeye, or pre-cooked and used throughout the week in a meal prep style batch Sunday cookoff.
Brussels sprouts contain a healthy amount of glutathione, which is been shown to reduce the risk of colorectal cancer. In this PubMed study, consumption of glucosinolate-containing Brussels sprouts for 1-week results in increased rectal GST-alpha and -pi isozyme levels. They hypothesized that these enhanced detoxification enzyme levels may partly explain the epidemiological association between a high intake of glucosinolates (cruciferous vegetables) and a decreased risk of colorectal cancer.
Besides the health benefits of these cruciferous vegetables, by caramelising brussels sprouts in the oven, and making the shells nice and crispy, you can get a delicious crunchy texture. Don’t boil or steam these vegetables unless you like squeaky little squads of green on your plate and some pretty unimpressed guests.
