Prosciutto & Melon Pesto Poppers

Sooooooo I’m not sure I can really call this a recipe. It’s more so an idea. An appetizer idea, a snack idea, a party idea. It’s just a delicious idea. And it’s an awesome snack to have around the house when you’re in need of something and don’t want to go balls deep into a bag of chips. After filming 8 cooking videos last week, I have no interest in creating anything that takes me more than 10 minutes. This b*tch just ain’t got time for that.

Speaking of limited time and patience, I think I may have fallen back in love with my air fryer. I hated it for a solid day, but now I’ve opened up to it a bit more…pretty much the same way I feel about all people. I talked about my frustration on Tuesday after having some sh*tty luck with my first batch of brussels sprouts and carrots. But now I have it down. The first time around, I barely sprayed the veggies with fat, then I cooked it all for 15 minutes at 400 degrees and it sucked bad. Well now I’m tossing the veggies in a good amount of fat, cooking all of them at 370 degrees for 18 minutes, and tossing the basket halfway through to make sure everything cooks evenly. Now I’m coming out with crispy brussels sprouts and caramelized carrots. It’s the best. What I’m loving so far is that I can roast veggies without having to preheat the oven or heat up the house and I can have the same type of roasted veggies in way less time. I still haven’t tried any meat in it but that’s the goal this weekend. Especially because I may be a sad emotional mess on Saturday…

You know why? My BFF is moving. She got a new job about 6 hours from here so her, her boyfriend and their adorable pup are packing everything up and moving their life. I’m so proud of her for trying something new and going with her gut. But now I don’t have her 2 miles from my house. And that sucks big time. But I’m thinking we may need to start a Friday FaceTime date to make sure we catch up on everything weekly. I hope Jackson is ready to take on all the responsibilities she had as a best friend. Based on him sitting at my side staring at me for the past 10 minutes trying to get his food, I trust his listening abilities. Now excuse me, I’m off to cry for the next few days.

Prosciutto & Melon Pesto Poppers

Prep Time 15 minutes
Total Time 0:15
Serves 18 poppers - 6 cups     adjust servings

Ingredients

  • 1 cup cubed melon
  • 1 cup cubed cantaloupe
  • 8 ounces prosciutto
  • 4-5 ounces of pesto*

Instructions

  1. Cube fruit into small pieces that all look the same.
  2. Fold each piece of prosciutto in half lengthwise then roll it. Cut it each roll in half and repeat with all pieces. 
  3. Pour pesto into 6 cups. Then make your poppers - place 2 piece of melon, 1 piece of prosciutto, and 2 piece of cantaloupe and repeat however you've like. This should make 18 poppers!
