Keto Lava Cake

This keto lava cake is a delicious, single serve keto dessert and is super quick to make. If you love chocolate and don’t have almond flour for my chocolate chip cookies, then this recipe is perfect for you.

If you haven’t tried a lava cake before, then you’re in for a real treat (pun intended). Lava cakes are characterized by having a goey oozey center, which is simply part of the sweet dessert on the inside that isn’t cooked through. I don’t suggest doing this dessert in the microwave, as microwaves cook from the inside out, which is exactly what you don’t want in this case.

I topped this delicious single serve keto dessert with a strawberry and some powdered erythritol, but those two items are not necessary to this delicious recipe. Alternatively, you could top it with Keto Icecream. That would be the ultimate pair!

Ingredients
Instructions
  1. Preheat the oven to 220 degrees C (425F).
  2. Line a ramekin with butter.
  3. Melt the butter, Erythritol and Keto Condensed Milk together in a small saucepan (or microwave).
  4. Remove from the heat and add cocoa powder, vanilla extract and the egg. Mix together well.
  5. Pour the ingredients into your ramekin, and place into the oven for 12 minutes. The top will still be soft. Let it stand for 1 minute, invert on a plate and serve with keto ice cream or berries of your choice.
