Keto Waffles

Keto waffles are probably my new favorite breakfast recipe. They are super easy, delicious and fun to make with the kids.

If you have recently bought a waffle maker, and you’re looking to do something with it as you have recently decided to give the ketogenic diet a try, then THIS is the recipe that might just save your life.

Waffles are great by themselves, or with plenty of butter, but why not make them a real treat and add some sugar-free maple syrup and top it all off with some Keto Icecream? This batter makes 3 complete waffles, but you’ll probably feel full after just 1/4 of the waffle. They are fluffy but calorically dense, so don’t go putting a whole waffle on your plate…

Its made with Almond Flour and xanthan gum, much like my Keto Bread (just with much fewer eggs). This recipe doesn’t have any eggy smell what so ever, even when you’re cooking them (crazy, I know). Turns out, when you introduce vanilla and a little sweetness into the mix, it both masks the sulfur smell completely, and once cooled will taste exactly like wheat flour waffles.

Depending on how crispy you like these waffles, I suggest cooking for 4-7 mins depending on the heat of your waffle iron. If they are crispy, then they are easier to pick up.

Keto Waffles

  1. In a large bowl, beat your eggs until well combined.
  2. In a seperate bowl, add the almond flour, baking powder, salt and xanthan gum. Mix thouroughly
  3. Warm the almond milk up on the stove for about 3 mins. Make sure this is not too hot otherwise you'll cook the eggs
  4. Mix with the eggs in the first bowl, adding the erythrtiol, melted butter and vanilla extract.
  5. Combine the eggs with the almond flour mixture and let it sit for about 5 mins while the waffle iron heats up
  6. Follow the directions on your waffle iron manual on how to cook these badboys, (usually around 5-7 mins). Let them sit to cool slightly and enjoy.
