Texas caviar is a salad of black-eyed peas or black beans tossed in vinaigrette-style dressing or lime juice and usually eaten with tortilla chips. It was created in Texas around 1940 by Helen Corbitt, a native New Yorker who later became director of food service for the Zodiac Room at Neiman Marcus in Dallas, Texas. She first served the dish on New Year’s Eve at the Houston Country Club.  She later served it at a hotel in Austin and the humorous comparison was made to it being like fancy ‘caviar’.  The name stuck and thousands of people still call it Texas Caviar.  There are a few other names for the same recipe: Cowboy Caviar, Mississippi Caviar and probably more!

Kids love to scoop up fresh Texas Caviar with blue corn chips, or homemade scoops, as a hearty after-school snack.

The Key To A Good Texas Caviar

This variation on the Lone Star State favorite involves a diverse variety of diced vegetables that come together to create a crunchy, sweet medley. The recipe is foolproof, but you’ll want to dice your veggies as uniformly as possible in order to create an easy-to-eat “caviar.” Start by washing all of your fresh vegetables.  Next prepare a large cutting board and grab your sharpest serrated knife. The serrated knife will help you obtain nice straight edges and petite square shapes when you dice the peppers and tomatoes.  Chopping your veggies small is perfect for kids.  The fresh squeezed lime juice is a key component of the delicious flavor.  Fresh lime adds a citrusy zest that makes this dip so irresistible!
