- 1Cup Butter230g / 8 oz (Softened)
- 4tbsp Erythritol
- 2tsp CinnamonGround
- 2tsp Mixed spice
- 1tsp Almond extract
- 4Large Eggs
- 1.5Cups Almond FlourOr Almond Meal
- 2/3Cup Dried CranberriesLow Sugar Version
- 1tsp Orange zest
- 1tsp Orange zest

Preheat the oven to 180 C (355F)

Place the melted butter and sweetener into a bowl and beat until pale and fluffy.

Add cinnamon, mixed spice and almond extract and mix again.

Add 4 Eggs, one at a time, mixing between each one.

Add the almond meal, dried cranberries and orange zest.

Mix until well combined.

Place into a round baking tin and cook for 20 mins, or until it passes the skewer test.
