Salmon with Asparagus and Pine Nuts

Crispy pan-fried Salmon with Asparagus and Pine Nuts is simply the best easy fish to cook. The omega 3 fats in salmon are perfect for heart health, and most importantly, keto friendly.

This dish is bathed in asparagus, pine nuts, roasted brussels sprouts and a zest of lemon. Honestly, I’ve been eating salmon for breakfast every second day in my attempt to reduce my body fat percentage after running my Keto Marathon (and somehow gaining body fat).

As you can see from the pictures, this dish is simple but elegant. Its a mix of nutty goodness from pine nuts, with a zesty splash of lemon to counteract the crispy skin of the salmon. While I write this post, I’m drooling all over the keyboard just looking at the seared fish.

Salmon is a great fish to eat, especially because unlike tuna, it doesn’t contain as many heavy metals from the bottom of the ocean. If you’re wondering what I’m talking about, Tony Robins (well known public speaker and author) was diagnosed with heavy metal poisoning simply by consuming too much tuna. Tuna is a deep sea fish and is high in the food chain, therefore spends a lot of time at the depths of the ocean floors where compression and toxins can build up throughout the lifetime of a tuna.

Ingredients
Instructions
  1. Follow the recipe for the roasted brussels sprouts and the asparagus by clicking on the individual ingredients above
  2. Heat a frying pan / cast iron pan to high heat. When the pan has come up to heat, add in a little coconut oi and place salmon skin side down.
  3. Cook for 5 mins on the skin side (or until the skin is very crispy. Flip the fish over, and cook for a further 5 mins for medium rare, or 7-9 mins for well done.
  4. Remove from the pan, sprinkle with salt and cover with some squeezes of lemon.
